I prepared it for him... I marinated it,but it was fatty so I had to render it, then I braised it (seared it in hot fat, then simmer in a pan with liquid...). But before that I boiled a bunch of veggies, shocked it to retain its color and flavor..

Then made a sweet wine sauce and spread it over the cooked veggies and brain! Added some garnish as well.. and a slice of lemon, since brain has that fishy taste to it!
